In Ayurveda, digestion is central because it forms the foundation of our health. Even within Western health perspectives, there is increasing research into the connection between our gut flora and various physical and psychological conditions.

To support digestion as much as possible, our meals are vegetarian. We use a wide range of flavorful spices, cook with seasonal vegetables from local growers, and we make our heaviest meal around lunchtime.

More important than what you eat is how you eat. Your body is better able to digest your meal when you are relaxed and eat mindfully (while seated!). As a beneficial side effect, you will notice that you enjoy your food more.
