Sesame-Ginger Carrots

Carrots provide strength and endurance and calm the nervous system.
Ingredients
- 3 tablespoons ghee
- 2 tablespoons finely chopped fresh ginger or 1/4 teaspoon ginger powder
- 3 cups thinly sliced carrots
- 1/4 cup sesame seeds
- Salt
- 2 tablespoons unrefined sugar (we use coconut blossom sugar)
Preparation
- Heat the ghee and add the ginger and carrots. Sauté until the carrots begin to soften.
- Add the sesame seeds and sprinkle some salt over the mixture. Continue stirring until the carrots are fully soft.
- Sprinkle the sugar over the carrots, adjust the salt to taste, and stir until the sugar dissolves but does not caramelize.
