Sesame-Ginger Carrots

Carrots provide strength and endurance and calm the nervous system.

Ingredients

  • 3 tablespoons ghee
  • 2 tablespoons finely chopped fresh ginger or 1/4 teaspoon ginger powder
  • 3 cups thinly sliced carrots
  • 1/4 cup sesame seeds
  • Salt
  • 2 tablespoons unrefined sugar (we use coconut blossom sugar)

Preparation

  1. Heat the ghee and add the ginger and carrots. Sauté until the carrots begin to soften.
  2. Add the sesame seeds and sprinkle some salt over the mixture. Continue stirring until the carrots are fully soft.
  3. Sprinkle the sugar over the carrots, adjust the salt to taste, and stir until the sugar dissolves but does not caramelize.
